I've always liked birthdays. I always try and do something special for the other girls that remember theirs, and for the ones that don't, we give them new ones. I think it's important to have some time set aside just for one person, to make them feel special. Even if it's just five minutes a year with a roll with a candle stuck in it.
As for the count, if just always kept count. Sometimes it's important in the brothel, to know how old you are. For the more particular visitors.
