Aside from the obvious things such as armor, jewelry, weapons, and food/drinks, I wanted this list to show an overview of some of the things all the crafting professions are capable of.
Cook
Campfire Kits - Can be used to create trail food. Also offers power and morale regeneration.
Lore-master Pet Food - Offers helpful boosts and buffs to Lore-master companions.
Housing Décor - Cooks can craft 'Feasting Tables' and 'Kegs' which can be used in decoration hooks for player housing.
Lute Strings - Useful for the Minstrel class. They lower the perceived threat Minstrels would receive from healing a party member.
Crafted Relics - Things you can use in conjunction with your Legendary Items.
Jeweller
Loremaster Brooches - These go in a Loremaster's "Ranged" slot.
Loremaster Talismans - Talismans change the appearance of a lore-master's animal companion(s).
Rune-stones - Used primarily as a first-hand weapon by Rune-keepers, but are also used as a "class item" slot filler by Champions.
Edhelarn (Hope) Tokens - These can be used by any class but they can boost your health, the damage you deal, and can even increase your resistance rating. These tokens can be powerful tools against "dread" when you're near something like an evil shrine. They affect you and your Fellowship.
Housing Décor - Jewellers can craft chandeliers and candlestands which can be used in decoration hooks for player housing.

Metalsmith
Vocation Tools - Metalsmiths can craft tool sets used by all the crafting vocations.
Rune-keeper Chisels & Rifflers - These items provide buffs to a Runekeeper's abilities.
Legendary Captain Emblems - Captain class item.
Legendary Guardian Belts - Guardian class item.
Housing Décor - Metalsmiths can craft iron candlestands which can be used in decoration hooks for player housing.
Repair Stations - In the middle of nowhere? Carry one of these with you and you can repair your items ANYWHERE but it's more expensive than just going to a vendor.
Crafted Relics - Things you can use in conjunction with your Legendary Items.
Scholar
Battle Lore Scrolls - Temporarily boost your tactical mitigation, physical mitigation, physical mastery, and tactical mastery.
Crafting Lore - Comes for all crafting skills except farming, prospecting, and foresting. Increases chance of critical success.
Dyes - Pigments for your clothes!
Paints - Pigments for your house!
Potions - Healing potions for restoring morale and power
Captain Tonics - Forwards you into a battle-readied state and decreases the amount of power you use for attacks.
Champion Potions - Adds fervour.
Hunter Books - Enable Hunters to use less power for their attacks or reduces their threat in a group.
Hunter Bow Chants - Makes Hunters attacks more effective or accurate.
Hunter Potions - Gives Hunters more focus.
Hunter/Warden Oils - Fire or light oils which can be applied to the tips of javelins or arrows, to cause extra damage.
Lore-master Books - Class item.
Minstrel Songbooks - Class item.
Loremaster Parables - Decreases power consumption and stops induction interruptions.
Minstrel Sheet Music - Decreases power consumption and stops induction interruptions.
Pocket Items - Small trinkets to boost your stats.
Rune-keeper Rune-tools - One tool decreases power consumption and stops induction interruptions. The other shifts the current attunement three steps further.

Tailor
Burglar Signals - Class-specific tools that can be use to turn the tide of a battle.
Captain Armaments - Changes the appearance of a Captain's Herald-companion.
Housing Décor - Tailors can craft rugs and the Elvish bed.
Rune-keeper Rune-satchels - Class item.
Crafted Relics - Things you can use in conjunction with your Legendary Items.
Weaponsmith
Burglar Throwing Weapons - Throwing stars for ranged attacks.
Burglar Tricks - Caltrops and marbles - essentially traps that debuff your opponents.
Guardian/Warden Shield-spikes - Sets damage type to Beleriand, Westernesse, or Ancient Dwarf.
Throwing Weapons?? - Can't recall if these are specific to a class or if I've ever seen them?

Warden Battle Hymns - Provides buffs to some Warden gambits, and decreases "Gambit Builder" power cost.
Warden Carvings - Provides temporary stat boost and decreases power cost.
